Hi how would we connect to a MySQL Database that is not public but that sits within an AWS Server?
Is there a self hosting version of this product which can be used to acheive this?

No, there is no self-hosting version for such cases. In order to be able to connect to MySQL database within AWS, you need to configure your database/server to allow connections from Skyvia IPs: 40.118.246.204 and 13.86.253.112
